This is a new twist on the standard cheese filled quesadilla. Ingredients:
12 flour tortillas (6 ) |
olive oil |
4 oz. crumbled feta cheese |
1 1/2 c.lightly packed fresh basil leaves |
1 c.thinly sliced roasted red pepper strips (approx 54) |
1/4 c.chopped olives |
Directions:
1. Heat skillet. 2. For each tortilla, as follows: 3. Brush one side of flour tortilla w/oil,place in skillet/fry pan. 4. Sprinkle entire surface of each w/feta cheese,basil leaves approx 9 pepper strips and chopped olives. 5. Cover w/second tortilla. 6. Brush top lightly with olive oil. 7. Cook on medium heat for 3 minutes on each side,until lightly browned. 8. Cut each tortilla into 6 wedges. 9. Makes 36 appetizers. |
