This Mediterranean recipe gives pork chops new life with the addition of unique flavors like mint and curry. Serve this super quick meal with rice and a salad. Ingredients:
2 teaspoons chopped fresh mint |
2 teaspoons sugar |
1 (8-ounce) carton plain fat-free yogurt |
1 1/2 tablespoons hoisin sauce |
2 teaspoons curry powder |
4 (4-ounce) boneless center-cut pork loin chops (1/2 inch thick), trimmed |

Directions:
1. Combine mint and sugar in a small bowl, pressing mint into sugar with back of a spoon until blended. Stir in yogurt. Set aside. 2. Combine hoisin sauce and curry powder, stirring well; spread evenly on both sides of pork. 3. Prepare grill. 4. Coat grill rack with cooking spray; place on grill over medium-hot coals (350° to 400°). Place pork on rack; grill, covered, 5 minutes or until done, turning once. Serve pork with yogurt mixture. |
