Mediterranean Pasta With Fire Roasted Tomatoes |

McCormick Gourmet Collection Ingredients:
2 lbs medium plum tomatoes (10 -12) |
1/2 cup olive oil, divided |
4 garlic cloves, minced |
1 tablespoon italian seasoning |
1/2 teaspoon crushed red pepper flakes |
1/2 teaspoon sea salt |
1/4 teaspoon coarse black pepper |
8 ounces pasta, such as fettuccine or 8 ounces spaghetti |
Directions:
1. Place tomato halves, cut sides up, in foil-lined 15 x 10 x 1 pan sprayed with no stick cooking spray. Mix 1/4 cup oil, garlic and seasonings in small bowl. Spoon over tomatoes. Drizzle with 2 Tlb of remaining oil. 2. Roast in preheated 400 F oven 45 to 60 minutes until tomatoes are soft and lightly browned on top. 3. Prepare pasta as directed on package. Drain well. Place 1/2 of the roasted tomatoes and remaining 2 Tlb oil in large bowl. Coarsely mash tomates. Add pasta and remaining tomates, toss to mix well. Sprinkle with shredded Parmesan cheese and additional crushed red pepper, if desired. |
