Mediterranean Pasta Salad |

A simple pasta salad filled with the flavors of the sunny Mediterranean. Ingredients:
1 cup macaroni |
2 ounces roasted red bell peppers, diced |
1/4 cup sliced black olives |
1/4 cup crumbled feta cheese |
1 tablespoon olive oil |
1 tablespoon minced garlic |
1 teaspoon lemon juice |
salt and pepper to taste |
Directions:
1. In a small bowl or cup, combine olive oil and chopped garlic. Set aside. 2. Cook pasta in a large pot of boiling water until al dente. Drain. 3. Transfer pasta to a medium mixing bowl, and add roasted red peppers, olives, and feta cheese. Toss with olive oil mixture and lemon juice. Season with salt and pepper. Serve immediately. |
