No clue where I got this recipe from, haven't tried it yet, but it sounds awesome and super simple to make Ingredients:
1 (12 ounce) package tube rigatoni pasta |
12 pitted black olives, whole or 12 pitted black olives, sliced |
1 (14 1/2 ounce) can diced tomatoes, drained |
1/3 cup red onion, finely chopped |
1/4 cup parsley, minced |
1/4 cup extra virgin olive oil |
1/4 cup red wine vinegar |
2 garlic cloves, minced |
1 tablespoon dried oregano or 2 tablespoons finely minced fresh oregano |
Directions:
1. Cook, rinse, and drain pasta. 2. Add remaining ingredients (except dressing ingredients) and mix. 3. Prepare dressing by combining all ingredients. 4. Toss with pasta. |
