Great salad to use Mediterranean sausage. Ingredients:
1/4 cup lemon juice, fresh |
1 tablespoon lemon zest, grated |
1 tablespoon dijon mustard |
1 teaspoon garlic, minced |
1 tablespoon greek oregano |
3/4 cup olive oil |
salt and pepper |
1 lb mediterranean sausage |
2 cups orzo, cooked |
1/3 cup pine nuts, toasted |
6 green onions, thinly sliced |
1/4 lb feta cheese |
10 kalamata olives, pitted and coarsely chopped |
1 bunch spinach, fresh, chopped |
Directions:
1. Whisk together the dressing ingredients and check if it needs salt and pepper. 2. In a large skillet, fry the sausage over medium heat for 4-5 minutes, breaking it up as it cooks. 3. In a large bowl, toss the cooked sausage with the remaining ingredients except the spinach. Toss with the dressing; taste for salt and pepper. 4. Add the spinach and toss again. |
