Very fresh with pine nuts, feta and mint. This always gets me raves - hopefully, you will enjoy it as well. Ingredients:
8 ounces orzo pasta |
1 cup grape tomatoes |
1 cup feta cheese, crumbled |
1/3 cup chopped green onion |
1/2 cup chopped seeded cucumber |
1/2 cup pine nuts, toasted |
1/2 cup mint leaf, finely chopped |
2 tablespoons olive oil |
2 tablespoons extra virgin olive oil |
3 tablespoons fresh lemon juice |
1/4 teaspoon salt (to taste) |
Directions:
1. Prepare orzo according to package directions. Drain well. Toss with a little olive oil to coat lightly. Let cool. 2. When pasta has completely cooled, combine all ingredients, except tomatoes, in a large bowl and stir to coat well. Add tomatoes. Refridgerate several hours or overnight. |
