MEDITERRANEAN MUSHROOMS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Ludwig Estate in Temple Texas in 1984. Ingredients:
1-1/2 pounds porcini mushrooms |
3 tablespoons bacon grease |
2 cloves garlic thinly sliced |
juice and zest of 1 lemon |
4 tablespoons parsley chopped |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Slice mushrooms into 3/4 thick slices. 2. Heat fat in sauté pan until smoking. 3. Add mushrooms and cook for 5 minutes then add garlic and cook 1 minute longer. 4. Add lemon juice, zest and parsley then season with salt and pepper and serve immediately. |
