Mediterranean Mozzarella Chicken |

Found on Kraft - A great weeknight chicken dish. Personally, I add more cheese because our family loves cheese. Ingredients:
1 lb boneless skinless chicken breast half (about 4 small) |
1 red onion, halved, sliced |
1 zucchini, chopped |
1/4 cup kraft tuscan house italian dressing and marinade |
1/2 cup grape tomatoes, halved (could also use cherry tomatoes, halved) |
1/2 cup pitted black olives |
1 cup mozzarella cheese, shredded |
Directions:
1. Heat a large nonstick skillet sprayed with cooking spray on medium-high heat. Add chicken; cover skillet with lid. Cook about 5 to 7 minute on each side or until chicken is done, adding onions and zucchini after 5 minute 2. Add the dressing, tomatoes and olives; cover. Cook on medium-low heat about 2 minute or until heated through. 3. Stir mixture. Top with cheese; cover. Cook 2 minute or until cheese is melted. |
