Summer veggies in mediteranean flavored salad! Easy to adapt to your tastes. This makes a great base for pasta salad too, just throw in your favorite cooked pasta and a little extra dessing. From a local news program. Ingredients:
4 cups roughly chopped veggies of your choice (i like tomatoes, red onions, cucumbers, bell peppers) |
2 ounces crumbled feta cheese |
1/2 cup pitted and sliced black or kalamata olives |
1/2 cup torn basil leaves |
2 tablespoons extra virgin olive oil |
1-tablespoon balsamic vinegar |
salt and pepper to taste |
Directions:
1. Toss all ingredients together, allow to chill at least 2 hours to let flavors meld. |
