Mediterranean Lentil Salad |

This is good served hot as a side dish with brown rice or even better cold as a salad. Ingredients:
1 lb dried lentils, cooked |
1 yellow onion, chopped |
2 stalks celery, chopped |
2 cloves garlic, pressed |
2 tbls olive oil |
6 fresh basil leaves, cut into strips |
1/4 cup walnuts, chopped |
4 cups fresh spinach leaves |
Directions:
1. Sort through and wash lentils. 2. Put first five ingredients in a sauce pan and cover with enough water to cover an inch. 3. Cook until lentils are tender, about 30 minutes. 4. Chill 5. Add fresh basil strips and walnuts. 6. Serve over spinach leaves |
