A tasty, refreshing alternative to spinach and rice! Ingredients:
2 tablespoons olive oil |
1 clove garlic, minced |
1 1/2 cups cooked rice |
1 (10 ounce) package frozen chopped spinach, thawed and drained |
1 (6 ounce) jar marinated artichoke hearts, drained and quartered |
1 (4 ounce) jar roasted red peppers, drained and chopped |
1/2 cup crumbled feta cheese with herbs |
Directions:
1. Heat olive oil in a skillet over medium heat; cook and stir garlic in the hot oil until fragrant and beginning to brown, about 2 minutes. Stir in rice; cook until rice is hot and grains are separate, stirring often, 2 more minutes. Add spinach and cook until heated through, 3 more minutes. 2. Stir artichoke hearts and roasted red peppers into rice mixture and cook 2 minutes; mix in feta cheese, remove from heat, and serve immediately. |
