This quick dish tastes like it took hours to prepare. From the American Diabetes Association. fettuccine, medium shrimp, frozen spinach, plain low-fat yogurt, crumbled feta cheese, garlic cloves, dill, pepper cvt Ingredients:
10 oz dry fettuccine, to yield 6 cups cooked |
12 oz fresh shrimp, medium, peeled and deveined |
10 oz frozen chopped spinach, thawed |
1 cup plain low-fat yogurt |
1/4 cup crumbled feta cheese |
2 garlic cloves, minced |
1 tbsp minced (fresh ) dill |
1 pinch black pepper, or to taste, freshly ground |
Directions:
1. Three minutes before the pasta is finished cooking, add the shrimp and spinach to the pot. Drain completely. Toss with the remaining ingredients and serve. |
