A dear friend gave me this recipe. Although she is not such a wonderful cook, this one passed the test and she is forced to bring it to any gatherings. Ingredients:
24 ounces roasted red peppers |
6 ounces feta cheese |
1 1/2 cups pine nuts, toasted |
1 cup fresh basil leaf |
4 tablespoons olive oil |
1 cup parmesan cheese |
Directions:
1. Preheat oven to 350 degrees. 2. Spray skillet with cooking spray and brown pine nuts. 3. Mix all ingredients and spread into pan. 4. Bake for 15-20 minutes. 5. Serve with pita chips or rustic bread chunks. |
