This recipe is a nice and light side to lamb, chicken, or fish. It's easy to make and tastes great hot or cold! Ingredients:
2 cups water |
1 tablespoon olive oil |
1/2 teaspoon salt |
1 (10 ounce) box couscous |
1 (13.75 ounce) can artichoke hearts, drained, finely chopped |
1 large tomato, cut into small dice |
1/3 cup chopped fresh parsley |
1/3 cup crumbled feta cheese |
1 tablespoon fresh lemon juice |
ground black pepper to taste |
Directions:
1. Bring the water, olive oil, and salt to a boil in a saucepan. Pour in the couscous, cover, and immediately remove from heat. Let sit covered 5 minutes. Fluff with a fork. Stir in the, artichoke hearts, tomato, parsley, feta cheese, and lemon juice. Season with black pepper. |
