Ingredients:
1 cup diced tomato
1/2 cup diced peeled english cucumber
2 tablespoons chopped green onions
2 tablespoons chopped fresh cilantro
2 teaspoons minced seeded jalapeƱo pepper
2 teaspoons fresh lemon juice
2 teaspoons olive oil
1/4 teaspoon salt
1/8 teaspoon black pepper
Directions:
1. Combine all ingredients in a medium bowl; toss gently. Let stand for up to 2 hours.
