Mediterranean Chopped Salad |

Ingredients:
1 cucumber. de-seeded and cut into 1cm cubes |
1 pint(s) cherry tomatoes, quartered |
14 ounce(s) garbanzo beans, drained and rinsed |
3 tablespoon(s) extra virgin olive oil |
3 tablespoon(s) red wine vinegar |
1 clove(s) garlic, minced |
1/2 small red onion, finely chopped |
1/2 cup(s) kalamata olives, chopped and pitted |
1/2 cup(s) parsley, coarsely chopped |
1 head(s) romaine lettuce, cut into 1/2 inch slices |
4 ounce(s) feta cheese, crumbled |
Directions:
1. Put cucumber and tomato into colander over the sink in a bowl. Sprinkle with 1 teaspoon of salt and leave at room temperature for 15 minutes. Discard liquid and wipe out bowl. 2. Place EVOO, red wine vinegar and garlic in a bowl and whisk together. Add cucumber, tomato, chickpeas, onion, olives and parsley. Mix gently and all flavors to marinate for ~ 5 minutes. 3. Cut romaine into 1/2 inch pieces. Add to other ingredients. Add feta and gently toss. |
