This recipe came from a bag of frozen carrot, broccoli & cauliflower. Ingredients:
2 tablespoons olive oil |
1 onion, cut into wedges |
1 garlic clove, crushed |
500 g chicken breast fillets, cut into pieces and lightly dusted with plain flour |
400 g chopped tomatoes |
500 g frozen broccoli carrots cauliflower mix |
10 kalamata olives, pitted |
1 tablespoon fresh parsley, chopped |
Directions:
1. Heat oil in a large frying pan and fry onion and garlic for 1 minute, move to side of pan. 2. Add chicken pieces and fry until golden brown. Stir in tomatoes and vegetables. 3. Cover and simmer for 15-20 minutes stirring occasionally. Stir in olives, and garnish with parsley. Serve with couscous, pasta, or rice. |
