Mediterranean Chicken & Rice Bake

Ingredients:
1 cup fat-free chicken broth
1 tbsp dried parsley
8 kalamata olives, chopped
1 tablespoon lemon juice
1/4 teaspoon pepper
7 ounces stewed tomatoes
1/2 cup brown rice
12 oz fresh boneless, skinless chicken breasts
Directions:
1. Preheat oven to 375.
2. Combine chicken broth, parsley, olives, lemon juice, pepper, tomatoes, and rice in a large saucepan. Cook rice according to directions.
3. When rice is done, spread into a shallow 2-quart baking dish. Place chicken in center of pan, sprinkle with garlic powder, paprika, salt, and pepper. Bake at 375 for 30 minutes, or until done.
