Mediterranean Chicken and Vegetables

A great tasting, filling, and healthy meal that I personally find as one of my favorites. This is a recipe that my mother created and I added too.
Ingredients:
1/2 cup steamed vegetables
1/2 (large) red bell pepper, sliced or chopped
1/4 cup acini de pepe
1/4 cup feta cheese crumbles
6 ounce boneless, skinless chicken breast
Directions:
1. Boil the chicken in a pot for 20 minutes (if frozen - shorter period for fresh) or until it is no longer pink in the middle.
2. Steam the vegetables using directions on package (if frozen) or place in boiling water (if fresh) until tender and hot to the touch.
3. Prepare the Acini De Pepe by boiling until tender and drain.
4. Layer the bottom of a plate with the Acini De Pepe.
5. Chop the Chicken Breast into bite size pieces and spread over the top of the Acini De Pepe.
6. Put the steamed vegetables and freshly chopped Red Bell Pepper on top of the Chicken Breast.
7. Sprinkle the Feta Cheese Crumbles on top and enjoy.
