This yummy recipe, won my mom a blue ribbon at the Wisconsin state fair, It is very beautiful and flavorful! Ingredients:
1/4 cup olive oil |
3/4 t. garlic powder |
3/4 t. dried oregano |
3/4 t. dried basil |
1/4 t. pepper |
1/2 t salt |
3/4 t. onion powder |
1 t. dijon mustard |
1/3 cup red wine vinegar |
2 sweet red peppers, halved |
1/2 lb. orzo pasta, cooked |
1/2 cup grape tomatoes, halved |
1/4 cup black olives, halved lengthwise |
2 oz. crumbled feta cheese |
1 chicken breast half, grilled, cut into small cubes |
Directions:
1. In small bowl, combine oil, seasonings, mustard, and vinegar. Stir together orzo, tomatoes, olives, cheese, and chicken. Season to taste with dressing. 2. Spoon into pepper halves. 3. Garnish with fresh oregano. |
