Mediterranean Cauliflower Salad |

Allow enough marination time for the flavors to blend. Ingredients:
1 head cauliflower, cut into florets |
1/4 cup red bell pepper, chopped |
2 tablespoons fresh parsley, chopped |
1/4 cup greek olive |
1 tablespoon capers |
1 tablespoon wine vinegar |
3 tablespoons olive oil |
1/2 teaspoon dried oregano |
salt and pepper, to taste |
Directions:
1. Steam cauliflower florets until just tender. 2. Refresh under cold water to stop the cooking process. 3. In a bowl, combine cauliflower, pepper, parsley, olives and capers, toss lightly. 4. Whisk together the vinegar, oil and oregano and pour over vegetables. 5. Marinate in the refrigerator for two hours or even overnight. 6. Serve cold. |
