Mediterranean Baked Halibut |

From Spring 2008 Taste of Alaska Recipes Ingredients:
2 plum tomatoes, cut 1/4-inch thick |
4 halibut steaks, approx. 1 pound |
1 onion, sliced |
1/3 cup kraft light zesty reduced-fat italian salad dressing |
2 tablespoons capers |
2 2/3 cups hot cooked brown rice |
Directions:
1. Preheat oven to 350°F. 2. Arrange half of the tomato slices on bottom of 9 inch square baking dish. 3. Top with fish, onions and remaining tomatoes. 4. Drizzle with dressing. 5. Sprinkle with capers. |
