4 cups chicken or vegetable stock |
1 cup stale bread crumbs of crusty bread |
2 eggs, beaten |
1/8 teaspoon cardamom |
pinch saffron |
1/2 teaspoon salt |
2 tablespoons lemon juice |
Directions:
1. Bring the stock to a boil, then reduce to low. Beat together the breadcrumbs, eggs, cardomom, saffron, and salt, then pour into the stock, off the heat, and beat. Return to a simmer for a few minutes to thicken. Stir in lemon juice and ladle into bowls. |
