Medieval Salat With Dressing |

A different kind of salad that is at once sweet and biting in the mouth. Goes with any main dish you can imagine. Ingredients:
2 bunches watercress |
2 packages mustard cress |
1 medium leek, finely sliced |
6 whole spring onions, chopped small |
1 bulb fennel, julienned |
1 handful fresh italian parsley leaves |
4 sprigs fresh mint leaves, slightly chopped |
6 fresh sage leaves, slightly chopped |
2 branches fresh thyme leaves |
sea salt |
black pepper |
dressing |
3 tablespoons wine vinegar |
5 tablespoons olive oil |
Directions:
1. Wash the cresses well. Wash the herbs and fennel and dry all these thoroughly. I use my lettuce spinner to dry them. 2. Mix the washed ingredients with the leek and spring onions, in a large bowl. 3. Sprinkle with salt and pepper, and mix again. 4. Dressing: 5. Mix the oil and vinegar and pour over the salad JUST before serving. |
