Medieval Salat With Dressing

A different kind of salad that is at once sweet and biting in the mouth. Goes with any main dish you can imagine.
Ingredients:
2 bunches watercress
2 packages mustard cress
1 medium leek, finely sliced
6 whole spring onions, chopped small
1 bulb fennel, julienned
1 handful fresh italian parsley leaves
4 sprigs fresh mint leaves, slightly chopped
6 fresh sage leaves, slightly chopped
2 branches fresh thyme leaves
sea salt
black pepper
dressing
3 tablespoons wine vinegar
5 tablespoons olive oil
Directions:
1. Wash the cresses well. Wash the herbs and fennel and dry all these thoroughly. I use my lettuce spinner to dry them.
2. Mix the washed ingredients with the leek and spring onions, in a large bowl.
3. Sprinkle with salt and pepper, and mix again.
