MEDIEVAL ITALIAN STEW This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Elmhurst Estate in Heath, Texas in 1981. Ingredients:
3 pounds stew beef cut in 1/2 cubes |
2 medium white onions chopped |
cooking oil |
1/2 cup raisins |
1/4 teaspoon cloves |
1/4 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1/4 teaspoon mace |
1/4 teaspoon freshly ground black pepper |
1 tablespoon white vinegar |
1 teaspoon salt |
Directions:
1. Brown beef in a skillet in a small quantity of oil. 2. Place browned beef and its juices in a stewpot. 3. Add more oil if necessary to the skillet then sauté onions until tender and translucent. 4. Add onions to stewpot. 5. Add raisins and spices to meat mixture along with 1/2 cup water. 6. Bring stew to a boil and reduce immediately to a simmer then simmer covered for 2 hours. 7. Stir occasionally and add water as necessary. 8. When beef is cooked add vinegar and salt then cook 5 minutes more. |
