A light vinegarette pasta salad.
Ingredients:
10 ounces linguine, cooked
1 chopped roma tomato
6 ounces sliced black jumbo olives
1/8 cup grated parmesan cheese
1 tablespoon pimiento
1 tablespoon diced fresh basil leaf (ab10 to 12 leaves)
1 tablespoon olive oil
1 tablespoon red wine vinegar
1/4 teaspoon salt
1 teaspoon fresh ground pepper
Directions:
1. Cook linguini and rince in cold water till cool.
2. Mix all ingredients and serve chilled.
