Meaty Jalapeno Poppers

Ingredients:
1 pound(s) bulk sausage or ground beef, pork, turkey or chicken
1 medium onion, finely chopped
1/2 teaspoon(s) salt (omit if using sausage)
pepper to taste
about 25 jalapeno peppers
2 cup(s) shredded cheddar or monterey jack cheese
Directions:
1. Brown meat and onion with salt and pepper to taste in a skillet over medium heat. I using sausage, omit the salt. Let cool slightly.
2. Heat oven to 350 degrees. Lightly oil a baking sheet.
3. Trim stems off jalapenos. Cut in half lengthwise and scrape out seeds and white membranes.
4. Fill jalapenos with meat mixture. Top each with shredded cheese. Place on pan and bake 25 to 30 minutes, until softened and browned. Cool slightly before serving.

6.  To broil, place filled jalapenos on lightly greased broiler pan. Broil about 6 inches away from the heating element for about 10 minutes, until bubbly, watching carefully to avoid burning and loss of filling.
7.  To grill, lightly grease bottoms of jalapenos and grill over medium to medium-low heat until bubbly and softened, about 10 minutes. Watch carefully to avoid burning and loss of filling.
8.  To cook in a skillet, heat a thin film of oil in a skillet over medium-low heat. Add jalapenos and cover. Cook until bubbly and softened, 10 to 15 minutes. Watch carefully to avoid burning and loss of filling.
