Meatloaf With Mozzarella, Mushrooms and Pepperoni |

Come home to a house filled with the warm, comforting scent of fork-tender meatloaf loaded with fresh veggies and mozzarella cheese. This is a slow-cooker recipe but can be made in the oven at 350 for 1 hour. Ingredients:
2 slices white bread |
1 1/2 lbs ground sirloin |
1 1/2 cups finely chopped button mushrooms |
1 cup shredded part-skim mozzarella cheese |
1/3 cup finely chopped pepperoni |
1 teaspoon dried oregano |
1 teaspoon garlic powder or 2 finely minced garlic cloves |
3/4 teaspoon salt |
2 large eggs, lightly beaten |
2 tablespoons ketchup |
Directions:
1. Tear bread into large pieces and blend in a food processor until they form fine crumbs. Combine crumbs, sirloin, mushrooms, mozzarella, pepperoni, oregano, garlic, salt and eggs in a large bowl and mix gently with your hands to combine. Form mixture into a 9-inch-by-6-inch loaf. Place in slow cooker. 2. Brush meatloaf with ketchup, cover, and cook on low until meat is cooked through, about 5 hours. |
