This is a very forgiving recipe - you can vary it to suit your taste. But, don't leave out the horseradish which, IMHO, makes it special. Feel free to change the ratio of beef to pork or leave out the pork altogether. If you like it spicy, substitute BBQ sauce for some of the ketchup. The original recipe called for 1 TBSP of salt - I never use that much. In fact, because beef is already loaded with salt, I sometimes omit it entirely, particularly if I use commercial BBQ sauce.
Ingredients:
2 beaten eggs
1 1/2 lbs ground beef
1/2 lb ground pork
1/4 cup milk
1/4 cup ketchup
1 teaspoon dry mustard
2 cups soft breadcrumbs
3/4 cup minced onion
1/4 cup finely chopped green pepper
1 teaspoon prepared horseradish
1 1/2 teaspoons salt
Directions:
1. Add eggs to meat and blend thoroughly without overworking the meat.
2. Mix remaining ingredients together and add to the meat mixure.
3. Shape into a loaf pan - I like to use an oval one.
4. Cook for 1 hour in a 400°F oven - or -
5. Cook for 40 minutes or so; remove from the oven and cool; top with ketchup; and store in the refrigerator covering it tightly with foil for a couple of days; then, cook for 20 to 30 minutes at 400°F.
