Meatloaf With A Brown Sugar Glaze |

I have been making this meatloaf for a while. I am not sure where the recipe came from but I alternate this with my snow-capped meatloaf recipe. It has a terrific brown sugar and ketchup glaze. Ingredients:
1/2 c. brown sugar |
1/2 c. ketchup |
1 1/2 lbs lean ground beef |
3/4 c. milk |
2 eggs |
1/2 t. salt |
1/4 t. black pepper |
1 small onion, chopped |
1/4 t. ground ginger |
3/4 c. finely crushed saltine or ritz crackers |
Directions:
1. Preheat oven to 350 degrees. Lightly grease a 5x9 inch loaf pan. 2. Press the brown sugar in the bottom of the prepared loaf pan and spread the ketchup over the sugar. 3. In a mixing bowl, thoroughly mix all remaining ingredients and shape into a loaf. Place on top of the ketchup and sugar. 4. Bake in preheated oven for 1 hour or until juices are clear. 5. Carefully invert meatloaf onto plate so that brown sugar and ketchup glaze is on top. |
