Delicious meatloaf just as I remembered. This meatloaf is tasty, tender, juicy, and firm enough to be sliced. The best meatloaf is the one that tastes like the one you grew-up with, this one is mine. 2010 - Jim Woodard Ingredients:
1 large onion, minced |
2 garlic cloves, finely chopped |
2 tablespoons olive oil |
1 lb ground pork (lean) |
1 lb ground beef (87 -90% lean) |
1 3/4 cups breadcrumbs, unflavored |
2 large eggs |
1/2 cup 1% low-fat milk |
1 teaspoon salt |
3/4 teaspoon cracked black pepper |
4 tablespoons ketchup |
2 tablespoons dark brown sugar |
4 tablespoons cider vinegar |
4 tablespoons ketchup |
Directions:
1. In a small skillet, heat olive oil to saute onions until slightly golden. Then add the garlic and continue to saute for 1 to 2 minutes longer. Cool slightly. 2. In a bowl combine the milk, eggs, salt, pepper, and ketchup mix well. Add the bread crumbs, mix, Add the beef, pork, and onions mix well (hands work best). Place into a loaf baking dish removing any air pockets. 3. In a small bowl mix the glaze ingredients and pour over the meatloaf. 4. Bake in a 350 degree oven for 60 to 75 minutes. 5. Remove when internal temperature is 155 degrees. 6. Let stand 15 minutes prior to serving. |
