This is my step-mom's recipe, and it is AMAZING! The best meatloaf I've ever tasted! It is super easy to make and delicious! Enjoy! *Substitute ground turkey for a healthier option! Ingredients:
1 1/2 lbs ground chuck |
1 cup plain breadcrumbs |
1 medium onion, chopped |
1 large egg |
1 1/2 teaspoons salt |
1/4 teaspoon pepper |
15 ounces tomato sauce, divided |
1/2 cup water |
3 tablespoons vinegar |
3 tablespoons brown sugar |
2 tablespoons mustard |
2 teaspoons worcestershire sauce |
1 dash tabasco sauce |
onion (optional) |
carrot (optional) |
Directions:
1. Mix together ground chuck, breadcrumbs, onion, egg, salt, pepper and 4 oz. of tomato sauce and form into a log. 2. In a separate bowl, mix together the rest of the tomato sauce, water, vinegar, brown sugar, mustard, worcestershire, and tabasco. Set sauce aside. 3. Place loaf in a shallow baking pan and arrange peeled onions and carrots around loaf. 4. *If softer carrots are desired, microwave first for a few minutes. 5. Pour sauce over loaf and veggies. 6. Bake at 350 degrees for 1 1/2 hours. |
