Meatloaf Stuffed Red Peppers |

I was undecisive on what to make for dinner one night between stuffed peppers and meatloaf. So I came up with this recipe and loved it. Ingredients:
2 red bell peppers |
1 lb lean ground beef |
1/2 cup quick oats |
1/3 cup parmesan cheese |
1/3 cup onion, finely chopped |
1 teaspoon garlic, minced |
1 tablespoon dried basil |
1 tablespoon worcestershire sauce |
1/3 cup ketchup |
1 egg |
mozzarella cheese |
Directions:
1. Cut red peppers lengthwise clean out the core and seeds and set aside. 2. In a large mixing bowl, combine ground beef, oats, parm. cheese, onions, garlic, basil, worcestershire sauce ketchup and egg. Mix well. 3. Divide meat mixture in 4 parts. 4. Stuff each part into the red peppers. 5. Place stuffed peppers in a casserole dish. 6. Bake in oven 30 minutes until meat is cooked through and pepper is slightly roasted. 7. Top with cheese ( Sliced or Shredded ) and bake until cheese is slightly melted. 8. Served w/ green beans and roasted red potatoes. |
