A great way to cook meatloaf when its too hot in the summer to turn on the oven. Great with a side of grilled veggies. Ingredients:
1 lb ground pork |
1 lb ground turkey |
2 eggs |
2 tablespoons dried breadcrumbs |
8 ounces sliced fresh mushrooms |
1 clove garlic, minced |
1 teaspoon italian seasoning |
1/2 teaspoon basil |
1 1/2 teaspoons worcestershire sauce |
Directions:
1. Preheat and outdoor grill for medium heat. 2. In a large bowl, using your hands, mix together all ingredients. 3. Be careful not to over-mix as the meatloaf will be a little tough. 4. Pat evenly into a 9 inch pie plate. 5. Place the pie plate onto a cookie sheet and then place onto the grill grate. 6. Close the lid, and cook for 30-45 minutes, until no longer pink. 7. (The meat cooks faster on the grill than in the oven.). |
