These yummy little cheese and catsup topped meatloaf muffins are made with stuffing mix and are a breeze to prepare. A real family pleaser! Great for a busy weeknight meal, potlucks, or a meal on the run. I hope you enjoy as much as we do! Ingredients:
1 lb ground beef (or turkey!) |
1 (6 ounce) box seasoned stuffing mix (i use chicken or cornbread stuffing) |
1 cup water |
3/4 cup catsup |
3/4 cup shredded cheddar cheese |
Directions:
1. In a large bowl, mix together ground beef, water and stuffing mix until well incorporated. 2. Roll about 1/2 cup of the meat mixture with your hands into balls and press into the cups of a greased muffin tin. 3. Make small indentations into the tops of the muffins and fill with ketchup. 4. Bake at 350 degrees F for about 30 minutes. 5. Take out meatloaf muffins, sprinkle the tops with shredded cheese and return to the oven for an additional 5 minutes. 6. Cool for 5 minutes before turning out of tins. Enjoy! |
