These make wonderful individual meat loaves. I used to make meat loaf the traditional way, but after seeing them in Kraft's Food & Family magazine I gave it a try. Now this is how I usually bake them. Even though they had a variety ways to make it, I use the same recipe my mom would make when I was growing up. Ingredients:
2 eggs |
1 slice of bread, torn in pieces |
1/2 medium onion, diced |
1/4 cup milk |
1/4 cup ketchup |
1-1/2 tsp. salt |
1 tsp. ground black pepper |
1-1/2 tsp. worcestershire sauce |
1 tsp. garlic salt |
1 lb. ground beef |
Directions:
1. Preheat oven to 375 degrees. 2. Mix all ingredients together just till combined, don't over mix. 3. Spray muffin pan with non-stick cooking spray. 4. Form meat mixture into individual medium sized balls & drop into each muffin tin. 5. Bake 30 minutes. 6. Spread each mini loaf with ketchup and bake an additional 10 minutes or until they're cooked through (160 degree) |
