Each serving is 4oz of meatloaf and 1/4 cup gravy. I found this recipe at Wegmans market. I have not tried this recipe, but I'm posting it for safe keeping. Ingredients:
1 lb 80% lean ground beef |
2 large eggs |
1/2 cup onion, chopped |
2 tablespoons basting oil (wegmans recommended) |
4 1/2 tablespoons memphis style barbecue sauce, divided (wegmans recommended) |
1/2 teaspoon salt |
1 teaspoon pepper |
1 1/4 cups kikkoman panko breadcrumbs (international foods aisle) |
11 ounces beef culinary gravy, warmed (grocery dept) |
Directions:
1. Preheat oven to 350. 2. Combine beef, eggs, onion, basting oil, 2 1/2 tablespoons BBQ sauce, salt, and pepper in large bowl. Add panko crumbs. Combine beef mixture well and form into loaf shape. Center on baking sheet. 3. Bake 30 minutes; remove from oven and top with remaining 2 tablespoons BBQ sauce. Return to oven. Bake 25-30 minutes or until internal temp reaches 160. (Check by inserting thermometer halfway into thickest part of meat). Serve with warmed gravy. |
