I'm not a great carnivore but this meatloaf is gorgeous with its blue cheese filling, and trust me, the ketchup isn't overwhelming at all! Great to try with the kids, it may convert some to become more meaty lovers but the cheese may be a bit too powerful for them. More of an adult twist on a school time nightmare turned here into something a lot dreamier! Ingredients:
1 lb beef mince |
3 ounces mushrooms (chopped) |
2 ounces fresh breadcrumbs |
4 ounces streaky bacon (chopped) |
1 garlic clove (chopped) |
1 small onion (peeled and chopped) |
1 teaspoon oregano |
3 tablespoons tomato ketchup |
1 large egg (beaten) |
salt and black pepper |
4 ounces danish blue cheese |
1 tablespoon single cream (or top of milk) |
1 egg, beaten |
1 pinch chili powder |
3 tablespoons tomato ketchup |
2 -3 sprigs fresh parsley |
Directions:
1. Preheat oven to 350°F/180°C/gas 4. In a bowl mix all the ingredients (except the filling) together thoroughly and season well with salt and pepper. Grease 2lb loaf tin and spoon 1/2 mixture into the tin. 2. Crumble the cheese into a small bowl, mix well with cream and beaten egg and add chili powder. Spread this onto the meat mixture. Spoon the remaining meat mixture on top. 3. Bake in centre of oven for 1 hour and then remove. Turn oven up (475°F/240°C/gas 9), loosen sides of loaf tin with a knife and turn out gently onto an ovenproof dish. Smear loaf all over with more tomato ketchup and put back into the oven, cooking for 10-15 minutes. Serve garnished with sprigs of parsley. |
