Dinner stands alone with this salad. No meat in this one.
Ingredients:
4 hardboiled egg
4 cups torn fresh spinach
1 (15 ounce) can garbanzo beans, drained
1 cup cauliflower floret
1 cup sliced fresh mushrooms
1 cup cherry tomatoes, halved
1 small cucumber, thinly sliced
1/2 small red onion, thinly sliced and seperated
1/2 cup coarsely chopped walnuts
Directions:
1. Slice eggs.
2. Mix all ingredients in a large salad bowl.
3. Serve with dressing.
