Dinner stands alone with this salad. No meat in this one. Ingredients:
4 hardboiled egg |
4 cups torn fresh spinach |
1 (15 ounce) can garbanzo beans, drained |
1 cup cauliflower floret |
1 cup sliced fresh mushrooms |
1 cup cherry tomatoes, halved |
1 small cucumber, thinly sliced |
1/2 small red onion, thinly sliced and seperated |
1/2 cup coarsely chopped walnuts |
Directions:
1. Slice eggs. 2. Mix all ingredients in a large salad bowl. 3. Serve with dressing. |
