This is so good I have to post it so I don't lose it. I still can't believe it doesn't have any meat in it. I am not a vegetarian but I LOVE this lasagne. I tend to make it more than my regular lasagne. You get to cheat a little bit with the ingredients but it makes it sooo EASY. I hope you enjoy it as much as we do:) Recipe from Jean Pare. Ingredients:
1 1/2 tablespoons butter |
1 1/2 cups mushrooms |
1 cup onion |
25 ounces pasta sauce |
1 cup mild salsa |
1 egg white |
1 cup cottage cheese |
1/2 cup parmesan cheese |
6 oven ready lasagna noodles |
1 1/2 cups mozzarella cheese |
1/4 cup parmesan cheese |
Directions:
1. Sauce: Melt butter in a large saucepan and add mushrooms and onion. Saute until soft. Add pasta sauce and salsa and simmer stirring often for approximately 3 minutes. 2. Cheese filling: Mix the egg, cottage cheese and 1/2 cup parmesan and set aside. 3. Assemble in a 9X9 pan as follows:. 4. 1/3 cup sauce. 5. 3 lasagne noodles. 6. 1/2 cottage cheese mixture. 7. 1/2 of the remaining sauce. 8. 1/2 of the mozarella cheese. 9. 3 lasagne noodles. 10. remainder of cheese mixture. 11. remainder of sauce. 12. Remaining mozzarella. 13. 1/4 cup parmesan. 14. Bake covered at 350 for 45 minutes uncover and bake 10-15 minutes longer. Let stand 10 minutes before serving(optional) 15. Serve with caesar salad and garlic bread. |
