vegetarian Ingredients:
1 cup brown rice, cooked |
1 cup corn, frozen |
3 medium carrots, diced |
1/2 cup bell pepper, diced |
1 onion, diced |
4 cloves garlic, minced |
1 tablespoon oil |
1 (15 ounce) can black eyed peas |
1 (14 ounce) can diced tomatoes |
2 tablespoons fresh parsley |
1 teaspoon dried thyme |
1/4 teaspoon cayenne pepper |
salt and pepper |
Directions:
1. saute corn, carrot, pepper, onion, garlic (6 min). 2. stir in rice, tomato, peas and bring to a boil. 3. simmer 15 min. 4. add seasonings. |
