These are perfect for vegetarian's in spaghetti or served alone as an autumn appetizer. They are made with squash. Ingredients:
2 lbs.butternut squash |
1 teaspoon salt |
3 eggs |
1/2 cup breadcrumbs |
1/2 cup mint |
4 garlic cloves, chopped |
1 small onion, chopped |
1 tablespoon pepper |
2 cups peanut oil |
Directions:
1. run squash and salt in food processor Squeeze squash to remove excess water. Add remaining ingredients and mix well. Form into balls and fry until golden brown. |
