This is a hit with people who shy away from gazpacho because it is too tart. We always double the recipe so we can have seconds. It's great to keep on hand for a low-cal snack, too! Your trusty food processor will make preparation oh, sooo easy! Ingredients:
1 (14 ounce) can chicken broth |
1 small onion, diced |
1 green pepper, diced |
1 stalk celery, diced |
1 garlic clove, diced |
1 small onion, minced |
1 cucumber, minced |
1 green pepper, minced |
1 stalk celery, minced |
2 tomatoes, minced |
1/2 teaspoon cumin powder |
Directions:
1. Combine broth and diced vegetables in pot. Simmer on medium heat until vegetables are tender. Let cool. 2. When broth mixture is cooled, add minced vegetables and cumin, mixing well. 3. Store in refrigerator until ready to serve. |
