Meatballs or Meatloaf by Vivian (Excellent) |

This recipe was actually developed by a friend of mine, Vivian Hinton, here in Albuquerque, New Mexico. Ingredients:
2 lbs fresh ground pork |
2 lbs smoked ham (ground) |
2 eggs |
1 1/2 cups milk |
2 cups graham cracker crumbs |
1 1/2 cups brown sugar |
1 cup tomato juice |
1/4 cup vinegar |
2 tablespoons sherry wine |
1 1/2 teaspoons dry mustard |
Directions:
1. Mix & form the meatball ingredients into medium to large meatballs or a loaf. 2. Place meatballs into a deep baking dish or roasting pan, or if you're making a loaf, place the meat mix into a loaf dish or pan. 3. Mix the topping ingredients & cover the meatballs with the topping sauce mix. 4. Bake approximately 2 hours at 325°, basting 2 or 3 times. |
