Meatballs in Peanut Chile Sauce |

An easy and delicious crockpot dish is from A Year of Slow Cooking. You may use any type of meatball for this, but chicken meatballs are especially yummy. Ingredients:
40 frozen meatballs |
2 tablespoons chunky peanut butter |
1 cup coconut milk |
1 tablespoon red chili paste |
2 teaspoons soy sauce |
1 1/2 tablespoons white sugar |
Directions:
1. Mix all ingredients together except meatballs. It's okay if it's still chunky. 2. Place meatballs in crockpot. Pour sauce on top. 3. Cook on low for 4-6 hours. Serve over hot rice. |
