Meatball Soup With Vegetables and Brown Rice |

Another great and easy recipe to use up the frozen meatballs - I buy them for DH to eat when I am not home but sometimes they sound good to me too and this is a great way to use them Ingredients:
1 cup onion, diced |
2 tablespoons olive oil |
1 cup celery, diced |
1 cup carrot, diced |
1/2 teaspoon garlic, crushed |
2 tablespoons flour |
4 cups chicken broth |
20 -24 meatballs |
2 -3 cups prepared brown rice |
salt, to taste |
pepper, to taste |
Directions:
1. Heat olive oil in large saucepan and sauté onion, garlic, celery and carrots for 5 minutes. 2. Stir in flour to coat vegetables. Add chicken broth, meatballs, salt and pepper. 3. Bring to a boil. Reduce heat and simmer for 10-15 minutes. 4. Add prepared brown rice and serve immediately. |
