Italian meatball soup - only it couldn't find the quorn meatballs - you'll have to add them in independently Ingredients:
1/4 c onion |
2 tbsp olive oil |
2 cloves garlic |
1 small tomato |
1 c cannellini beans |
1 c spinach, chopped |
4 c vegetable broth |
2 c macaroni, whole wheat |
Directions:
1. Saute onion and garlic in olive oil. Add broth, beans, spinach, meatballs of choice, pasta, and tomato. Simmer until meatballs are cooked through.
