A simple lunch Ingredients:
1 lb hamburger |
1 onion, chopped |
1 stalk celery, chopped |
28 ounces tomatoes, chopped |
2 cups beef stock |
1 egg |
1/2 cup pasta |
salt |
pepper |
parmesan cheese |
Directions:
1. Saute onion and celery in oil. 2. Add tomatoes and stock. 3. Simmer for 5 minutes. 4. Combine beef, egg and 1 tbsp Parmesan, salt and pepper. 5. Shape into small meatballs and brown. 6. Drain and drop into soup. 7. Add pasta 8. Simmer 30 minutes. 9. Serve sprinkled with Parmesan. |
