Inspired by a living in a peasant environment where soup made of beef stock and vegetables was an excellent filling dish. Still true! Ingredients:
1/2 lb minced beef |
300 gr. of organic chicken broth |
4 or 4 1/2 cups of filtered water |
1/3 cup of parmigiana cheese |
3-4 ribbons of bacon, chopped |
2 1/2 shredded cabbage |
2 medium size, carrots, shredded |
2 pink potatoes, medium size, cut in cubes |
1 1/2 cup of frozen or fresh green peas |
1/2 cup scallions |
1/3 cup parsley |
1 small onion |
dill |
sea salt |
the amount of ingredients may be adjusted according to your taste |
Directions:
1. Combine water and chicken broth in the pot, put small onion, bring to boil 2. Meanwhile, mix together minced beef, thinly sliced bacon, chopped fresh or dry parsley, 1/2 bundle of scallions, shredded Parmigiana cheese and add some salt 3. Make small meatballs, and put it into the boiling water 4. After 5 minutes, put in cabbage, carrots, peas, potatoes 5. Let it all cook for 25- 30 minutes. Try it if there's enough salt 6. Once ready, turn the heat off 7. Put in chopped dill 8. The soup is ready! |
